Kathy, like you'll notice from the photos above, the overall volume of the muffins is slightly less in the decreased sugar versions. We don't add anything else to make up for it—instead we just settle for a slightly smaller muffin. The baking time for a muffin made using the 50% rule will take about the same amount of time in the oven as the original version, but it's always a good idea to use a toothpick inserted into the center to test for doneness.
