This is one of the best descriptions I have ever seen on the ratios in baking. I always knew from Grade 7 Home Ec oh those many years ago that recipes were like chemistry experiments and removing volumes of an ingredient would give a different outcome BUT I was pretty sure there was a way to do it properly they just didn't teach it. Thank you so much!!!
