This is so interesting and informative - thanks you for setting up and sharing your experiments! By an odd coincidence, I've been reducing sugar in my simple apple crisp, and stopped at a flour:sugar volume ratio of 3:1 (original recipe called for as much as 1:1!) but next time I will weigh the ingredients to see what that relationship will be. Thanks again! I think I will post a link to this page on my blog, if that is okay.
