Hi there! You're welcome to try increasing the temperature but we worry that the fruitcake isn't going to bake through properly. Fruitcake has quite a dense batter so the long, slow bake helps to bake out the liquid so the end result isn't overbaked on the exterior and unbaked in the center. We hope this helps!
