Couple of questions: 1) I have been storing my fruitcake during the aging process, unwrapped, in a disposable Gladware/Rubbermaid type container. Is this adequate? Or should I be wrapping in plastic within the container? 2) I baked my cake one month before Christmas, and I’m trying to age it a bit quickly to send to my parents. Is spraying daily with brandy too often? The cake seems to be a bit sticky. Should I hold back for a few days?
