Great questions. We love using paper baking pans because they're hearty enough to treat just like regular pans. You can brush your fruitcakes right in the paper pans, giving them a heavy application along the top. If you bake your fruitcakes in regular pans and are able to brush the sides of the cake too, consider that a bonus! It's not necessary but will help maintain a moist texture throughout the cake.
