You're right, the correct apple makes the Apple Pie! I am Dutch by birth and didn't know any better than to use de goudreinet aka de Schone or Belle van Boskoop (in English: Golden Rennet, Belle de Boskoop) for my pie. Then you grown up and move to America. Now what? Everyone tells you to use Granny Smith. No, really? But you have to trust them so you try. Oh, no way! Everyone enjoys the pie but me. I search and learn they grow in the north, and for $800 I can have a tree that wants part shade. It'll have to keep it indoors, with the air on. Yea... no. So the search keeps on. Many rounds later I arrive at Rome apples. Best I can find. The other day on a whim, I made a pie with Honey Crisp. Taste was spot on! But the apples' 'bite' was like raw, not even soft! Needless to say, I still miss my little Dutch apple.
