The best apples for apple pies made ahead of time and put into the freezer to be baked when needed is the Northwestern Greening. It does not lose texture when frozen and then baked. Been doing this for 20+ years. The frozen pie is put into the oven on a cookie sheet. Set the oven for 425 degrees and bake for an hour. Of course the size of the pie pan and whether it is metal or glass does affect the baking time.
