I use a few different apples in my pies, such as Honey Crisp, Ginger Gold and Empires. It is prime season here in NY State and apple pie time. One of the nurseries near me has about 7 varieties of apples in large containers at 49 cents a pound. The only apple I won't use is a Macintosh because it turns to applesauce in a pie.
