When my husband and daughter and I went to an orchard for the first time we had no idea what we should pick for a pie, apple sauce, ect. The owner was so kind to tell us "spies for pies" and a mixture of different apples seemed best for her applesauce. We usually try to separate our apples when we are picking and sometimes they can get a little mixed together but we generally use spies and we are pretty happy with the result.
