I haven't yet met an apple I don't like in a pie. I tend to use golden delicious, red delicious and gala, in no particular order. If someone gives me apples, they usually end up in pie. I don't use a lot of sugar either, 1/4 to 1/2 cup brown sugar per 9" pie.
