I respect all this expertise from you all but it appears these responses are from the East coast or the South. The problem I am having is the majority of these apples are not available in the Northwest. I live in Seattle. We have Granny Smiths and occasionally you will see a Mac but these other apples are generally not available in the super markets unless you are able to go a farmer's market (if they are still open) or you have the opportunity to go to eastern Washington and visit the apples orchards on the other side of the state. WholeFoods (aka "whole paycheck") or Central Market - another expensive super market that carries hard to find items often has apples not usually found. Braeburns and Honeycrisps and Granny Smiths are the the trifecta of apples that i have been using to give me a pie where the apple slices stay slices when you cut the pie. I also use KAF's boiled cider as my "secret ingrediant" in my pie recipe. If you have a better apple combo or suggestion based on what is available on the West coast, I would love to hear it.
