My sister in law grew up on an apple farm in California. Their apple of choice for pie was the Newtown Pippin or Gravenstein. Now that I'm in Texas, although I used to be able to find Jonathans and Winesaps for pie along with Macintosh, now I'm pretty resigned to Macintosh with Granny Smith and an occasional Empire. I like to mix them up to bring out the best flavor and texture.
