I grew up in NH apple country, surrounded by orchards. The local growers wife would always gift a peck of cooking apples to each neighbor, and they were Baldwins. Old orchards also contained many varieties mentioned above (Spies, Greenings, Gravensteins, etc.) when they put out new trees, they were Red Delicious, Cortland, and Macs, both Early Macs and main season. These were sold for the fresh market. But older farms grew apples that would store, like the pie apples mentioned above. The Baldwin’s were bought by the pie maker Table Talk Pies for their apple pie. Mom preferred the Baldwin’s.
