For my pies I use either Courtland or Northern Spys and Braeburns or Ambrosia apples, a rather new Apple from Canada which to me, is the best Apple ever. I sometimes will use a few Golden Delicious or Macintosh, but usually equal parts of two of the apples mentioned above make the perfect pie.
