Hi Terrie, one of our bakers who used to live on the West Coast said she liked to use a combination of Braeburn, Jonagolds, and alas your dreaded Granny Smiths. (They do provide a nice, tart flavor note and give the filling texture.) Feel free to use a combination of any of these, plus your favorite eating apple, to build a fantastic base for your pie.
