I'm jealous of all of you that have access to so many apple varieties! I'm in Florida and the choices are limited. For a long time I've used a combination of Rome and Granny Smith in pies, and even Rome apples are hard to find. I'm surprised I didn't see Romes mentioned, since I thought they were widely recommended for pies.
