Lodi makes both wonderful apple sauce and pie. My preference otherwise are Granny Smith, Yellow/Golden Delicious and Mac/Jonathon in equal volumes. I like this combination for both texture and taste. A half cup of both white an brown sugar is good-cooking up a quick batch of carmel to add in tends to approach the "incredible" range :)
