My favorite pie apple is earligold. I do try to use a variety of apples, preferring jonagolds, pink lady, zestar and a few others. Being from Washington state is a plus as we have such a nice variety of apples. I absolutely despise Granny Smiths. In my experience they remain crunchy and have very little apple flavor. If that were all that was available, I would make berry pie.
