Here in NH I have been using the combination of Mac/Cortland in my pies for over 40 years. I use at least 4 of each apple. They're piled on until they overflow. This is a much loved pie in my family and switching to different apples did not fly. The pie sat much longer and in fact ended up being thrown out! Nope, Mac/Cortland for us!
