Red/Golden Delicious & Honeycrisp for me I want a bit of texture but soft not mushy that's disgusting. Born & raised on them, have tried the rest and definitely no GrannySmith for me. My son eats them but not in our. It's just all in what you prefer and especially what you grew up eating. The crust is as important as the apples if not more. If the crust isn't right it doesn't matter what kind of apples you use. So I chill my flour freeze European butter mixed with a bit of Crisco stick it in the mixer for a bit with vodka to make the flakiest ever!
