I like a number of apples for pie. Grannies if I am being nostalgic, Gala or Braeburn for a sweeter pie, Mac or Jonathon for just the right tartness. Last week I used a new variety called Holiday Crisp and got nice tart pie somewhere between the Grannie and the Mac.
It just depends on my mood.
