I lived in Massachusetts and my father had a large fruit and vegetable stand. I love Cortlands but you hardly ever see them in SW Fl. I used to use about 6 different types of apples for my pie and would use sugar, spices and a little lemon juice. I only used a little bit of macintosh because there would be to much liquid. I like my apples soft too. I'm experimenting with apples in Florida. Some are to hard.
