I used to always use Rome Beauty, especially for stuffed baked apples (apple pie without the belly roll). I can't find them anymore, so last week I tried Honeycrisp. I wish they weren't so expensive. They bake up wonderfully and have a very fruity apple flavor without being too sweet. I love them.
