Ida Reds, hands down. They're easy to find at local orchards in the Shenandoah Valley in Virginia. Rome and Granny Smith in a pinch. I freeze them, sliced and mixed with sugar, flour, and spices, in pie pans, so they thaw quickly. No need to pre-cook if they're frozen, but i do let them thaw before adding them to the crust.
