No one will convince me there is a better apple for pies than a Cortland. I have been making pies for 60 years, even won the title of “ Best Apple Pie in New England.” The taste cant be beat. If the texture doesn’t suit you, cut the apples a little larger. I also use NO butter in the crust, just shortening, and of course King Arthur! If it’s perfect, don’t fix it.
