My granny in PA used a lot of winesaps and northern spy and Gravensteins. I don't remember Granny Smiths being around much way back when, but she would've used them too. I remember Apple shopping with her and seeing about 50 different types available. She knew exactly what each kind was good for, and her larder was always full of applesauce and all kinds of jelly.
