I'm a Spy fan, through and through - waiting until the end of October is tortuous, but completely worth it. For pie, I mix them 3:1 with Cortlands. For applesauce, I mix them 1:1 with Macs. They freeze beautifully, sliced and ready for a pie in March or April and fry up for a perfect side with pork chops.
