Made my first apple pie of the season today! I used both Empire and Macintosh as well as a Burgundy apple that was on the counter. Delicious results!! We like soft pies--no hard/firm apple slices in pies for us. There are several new apple varieties to try and I'm looking forward to 'new' combinations. We like our pie slices warmed with French vanilla ice cream and I also enjoy a slice of cheddar with mine once in a while. Oh boy...time for a small piece of pie!
