I think you might have overlooked a good reason to freeze no-knead dough. People who live alone, or even some couples can’t eat all the bread a recipe makes before it goes stale. I cut my dough in half and freeze it. They way I always have freshly baked bread and it doesn’t go stale or go to waste. (In case you were wondering, I have tons of bread crumbs already.)
