We're sorry to hear that you're having some trouble, Daniel! It sounds like the oil might be a bit hotter than the thermometer is letting on to. We'd recommend testing your thermometer using either boiling water (which should be 212°F) or ice water (which should be right around 32°F). This will give you an idea about whether or not your thermometer is off and if so by how much. We hope this helps for future baking adventures!
