Love this story!! Inspires me to tell my own--went from retired teacher, medical transcription/editing to cottage food baker. Retired now, I've baked bialys using "onion water" from soaking dried onion flakes (used for topping "onion pockets") for all or part of the water in the recipe. Check out "Inside the Jewish Bakery" by Ginsberg & Berg.
