Every time I bake bialys, I try to bring them a little closer to perfection. It's not easy (I find) to attain consistency in a home kitchen. And with a bread as simple as a bialy, consistency is the key to closing in on perfection. Perhaps the only other bread that is this simple and this difficult to produce a consistent excellence is the baguette.
