Hi Joanna, When I'm baking with apples at home, I often include the peels in the recipe, too. I love a good crunch and don't mind the texture of the peels. However, some people like a more melt-in-your mouth texture when it comes to muffins, so for this recipe we suggest peeling the apples before adding to the batter. By all means, include the peel if you wish. It's the bakers choice. Happy baking! Kye@KAF
