We have very good luck popping the bread (cheese or otherwise) into a linen bread bag. Linen is somewhat antimicrobial so it helps suppress molding. If we expect the loaf to last for a week or so, we place the bread bag in the microwave, taking it out, of course, if we need to zap something. (That latter trick came from necessity when we had a tall, counter-surfing poodle.)
