I’ve pulsed maple sugar into a powdered sugar, and used it in this recipe without adding any additional starch and it worked beautifully. I’m sure you could do the same with coconut sugar, the flavor will just be different. I’ve also used Swerve confectioners sugar replacement and that worked great as well. I usually roll this dough out and cut into cute shapes with cookie or pie crust stamps, and they’re always a big hit with people, including kids!
