I really appreciate posts like this that offer testing advice complete with photos. However, this one confuses me.
The test uses the "Classic White Sandwich Bread" recipe, which specifies 4 cups of flour and a 9"x5" or 10"x5" pan. In the post the general recommendation is to use a 10"x5" pan for a 4 cup recipe.
Yet, 8 1/2" x 4 1/2" and 9"x5" pans were used in the test and the smaller pan made a better loaf! By extension using a 10"x5" pan (as specified in the recipe) would have been way too large.
Can you help explain this inconsistency? Why doesn't your recipe take into account the results of this test? I do note that the blog is 4 years old--have you increased the size of the recipe since then? Thanks
