You can definitely use both in a recipe, Agustin! If you would like to omit the commercial yeast you would need to use ripe starter from a healthy starter. Cutting out the commercial yeast will also mean that your rise times will vary drastically from the original recipe. So have some patience and make sure you have plenty of time the first time you try it in a new recipe. Best of luck!
