Hi there, you have an amazing site, and even more your unbelievable helpful customer service. Can I ask you please a question, I was looking for an answer online, and could not find it. I love all sourdough recipes, tried some of them, it took time to learn, especially how to make a sourdough starter. My question is I want to make buckwheat bread using a sourdough starter. I want to use simple ingredients, including kefir, buckwheat flour, salt, and sourdough starter. Since this is a gluten-free flour, what are liquid ratios to dry including sourdough starter?
I understand that it is hard to know exactly, but maybe approximate ratios will be appreciated.
