I'm thinking PJ's instructions assume that my starter is fed equal parts (4oz starter, 4oz flour, 4oz water). But what if I started with more starter when initially feeding it because I wanted to build up my volume for a large baking task. In that case I would have started with anywhere from 6oz - 8oz of starter before adding the 4oz of flour and 4oz of water. In the end, when I'm ready to use my discard would I still consider my substitution in the recipe to be a replacement of equal amounts of the flour and water?
