Hey there, Bonnie! Typically discard starter will keep in the fridge for about a week or so. As it sits and ferments though, it'll start to thin out and become a bit goopier in consistency which will impact the baked goods you use it in. You'll want to check the discard for any streaks of pink or orange before using it though, as that is a sign of bad bacteria. We hope this helps and happy baking!
