As a fellow newbie to sourdough baking, I know all starter no instant yeast requires a longer 2nd rise time. Again, being a newbie I do not know what that ratio is but, for me that is half the fun of baking & cooking, experimenting. Tossing the “failures” to my chickens & the dog & learning from the experience. Actually keeps me sane.
