For cookie dough that needs to be chilled before rolling, I have started rolling it out first on parchment paper then chilling it. It is so much easier to roll out room temperature cookie dough than cold cookie dough. So I was thinking about putting the sheets of dough in the freezer then cutting them out and baking.
