What is wrong with baking then freezing? I do it all the time. I start early in December so end up with quite a variety. The cookies take little time to thaw. I bag them then put in freezer. Don’t need all that space for cookie sheets. Another tip. I freeze the candy canes that I put on the tree and use them year after year. Of course I don’t let anyone eat those.
