If you're not comfortable leaving the dough in the refrigerator (the biggest risk is for it drying out, but if it's well wrapped, you should be fine) freezing works, too. We'd suggest moving the dough from the freezer to the refrigerator on Monday night if you can; best to let it thaw overnight so it's ready when you are on Tuesday. Susan
