Hi Cindy, if you're asking about pumpkin rolls that are a basic yeast dough, like our recipe for Golden Pumpkin Dinner Rolls, then the answer is yes, they can be frozen successfully. We recommend freezing this kind of rolls after they're fully baked and cooled; otherwise, the yeast may die during the freezing process and as a result, the rolls may not rise as well as they otherwise would and the texture may be compromised. If the pumpkin rolls you're referring to aren't a basic yeast dough (if they include a filling, perhaps) then they may not freeze as successfully.
