Hi Julie, you can certainly freeze biscotti part way through baking. You have lots of options about when to freeze since the biscotti has two bakes. You could freeze the entire log(s), unbaked or baked. If you freeze the unbaked dough, you'll want to let it thaw in the fridge overnight before baking the next day. Otherwise it might not bake all the way through in the center. If you freeze the baked log, you want to let it thaw enough so that you can make your slices and re-bake the biscotti. Consider adding about 5 minutes to the baking time to ensure they bake all the way through. Happy baking! Kye@KAF
