Hi Robin, you can certainly divide this recipe into two smaller loaves. The best time to divide the dough is right before shaping and overnight refrigeration. Be sure your Dutch oven isn't too large, or you may find the smaller loaves spread during baking, resulting in somewhat flatter loaves. I would recommend removing the Dutch oven lid after 20-25 minutes, and then baking until the loaf is nice and brown. Baking time will be a little shorter than for a larger loaf, so keep an eye on your loaf after the lid has been removed. I'm guessing overall bake time will be about 35 minutes.
