Hi Mila, I'm currently working on a blog post about Sourdough Flavor Development, and I think you have a good point—not everyone is after more sourness, and many sourdough bakers prefer their bread without any sour at all. Manipulating flavor in sourdough isn't always an easy process, but hopefully, I'll be able to offer some tools that will be helpful to both sour-seekers and those who prefer their bread on the mild side.
