Hi Nola, we recommend our unbleached all-purpose flour for feeding and maintaining your starter. This is because all-purpose flour has a higher starch content than bread flour, and will thereby provide more nourishment for your starter. You can use either our all-purpose or bread flour for the actual bread dough. I tend to stick to the type of flour recommended in the recipe.
